After serving his apprenticeship with André Jaeger in Switzerland and with Anton Mossiman in London, Ewald extended the development of his experience working in Shanghai, Singapore and Tokyo where he acquired refinement with an oriental touch that he now uses to create his delicate and unique cuisine.
