Recipe of the Month - Coconut Rundown Chicken

For October we bring you a taste of the Caribbean with Sheffield’s own Caribbean Company specialising in homemade sauces and seasonings.

If you find yourself still holding on to memories of summer holidays then try this colourful traditional Jamaican recipe out, it’s quick, very easy and tastes delicious.

Ingredients

3-4 chicken breast fillets cut into strips
Yabba Coconut Rundown Sauce
1 sweet red pepper sliced
1 medium onion sliced
5 tbsp Double cream (optional)
Dash of oil
Sea salt
Fresh crushed black pepper

1. Fry chicken in oil on both sides until cooked through.
2. Add peppers and onions and cook through slightly.
3. Add Yabba sauce and cream to chicken, stirring over a low heat until dissolved.
4. Cover and simmer for 5 minutes until thoroughly heated through.

Coconut Rundown is excellent when added to sautéed fresh vegetables, mixed wild mushrooms or fresh fish. Follow the same steps above.

Serve with rice and fresh pineapple rings.
