The carefully prepared menu is made up of 90% truly traditional dishes exactly as eaten in Japan while the rest is represented by author designed sushi, especially highlighting the Futomaki of carabinero or the Wagyu Tataki of Kagoshima, which is meat of the highest A5 quality with a degree of marbling fat between 10 and 12 (BMS), unique in the area.
