Watermelon and Feta Salad

It is not quite yet time for the hot stews and recipes intended to warm your stomach.

 Summer may be gone in calendar terms however the combination of watermelon and feta cheese, a Greek favourite, is not out of order. It takes 10 minutes to prepare and it¬ís eaten as a snack or a light meal. This variation includes paper-thin slices of red onion, and a touch of balsamic vinegar to turn this fabulous taste combination into a very refreshing, appetizing salad.

Ingredients per serving:

  • 3/4 - 1 cup of cold watermelon, cubed
  • 1/4 cup of feta cheese, crumbled or cubed
  • 1/4 medium red onion, cut in paper-thin slices
  • 1/4 teaspoon of balsamic vinegar or balsamic vinaigrette



  1. Place the watermelon in a bowl.
  2. Top with most of the onions, then the feta cheese.
  3. Place remaining onions on top, you can add some black olives for good measure
  4. Sprinkle with balsamic vinegar, and serve.

This recipe can be made in individual servings or multiplied and served in a large salad bowl.
