STUFFED ZUCCHINI ROLLS

Zucchini are the quintessential Italian summer vegetable, and you will find plenty of it in all the supermarkets and greengrocers on the Costa del Sol. Here is a refreshing and delicious summer recipe that will make your mouth water.

INGREDIENTS:

  • 4 each green zucchini small size, trimmed
  • 1 x olive oil for brushing and drizzling
  • 1 cup ricotta cheese
  • 1/2 each lemon juice
  • 1 splash olive oil, extra-virgin
  • 1 x salt and black pepper to taste
  • 5 tablespoons pine nuts toasted
  • 1 x balsamic vinegar for drizzling

PREPARATION:

  1. Slice the zucchini lengthwise, using a swivel vegetable and select about 40 good strips.
  2. Place the strips on oiled flat plates and brush with olive oil.
  3. Season with salt and pepper, and then put in the refrigerator for 20 minutes.
  4. Meanwhile mix well the ricotta cheese, lemon juice, extra virgin olive oil and seasoning to taste, then stir in the chopped basil leaves and pine nuts.
  5. Place a small teaspoonful of ricotta mixture on one end of a zucchini strip and roll up.
  6. Repeat to use up all the filling.
  7. Arrange the zucchini rolls on a plate and grind over some black pepper.
  8. Drizzle with a little olive oil and balsamic vinegar.
  9. Serve.
