This monthÂ’s recipe is CHILI CON CARNE & CHOCOLATE

Cocoa powder extract was found to have a greater anti-oxidant activity than that of red wine, whose mildly protective effects against heart disease are well known. The Aztecs swore by it, so here is an easy recipe for you to try.

Basic ingredients

  • 3 tablespoonfuls olive oil 
  • 4 onions, chopped 
  • 1 kg minced beef 
  • 2 cloves garlic, chopped
  • 2 cans tomatoes (400 grs each)
  • 2-4 red chillies chopped
  • 1 red sweet pepper
  • 4 teaspoons ground cumin
  • ½ teaspoon ground pepper
  • 2 teaspoons oregano
  • 2 bay leaves
  • 2-3 teaspoons salt
  • 1-2 cans ( 400 grs each) beans (red, white or black) drained
  • 60 grs bittersweet chocolate
  • Cheddar cheese for garnishing (optional)

METHOD

  1. Cook the minced beef, onion and garlic in olive oil.
  2. Stir in tomatoes, chilli, sweet pepper, salt & spices and cook for 15-30 minutes
  3. Add more chilli, salt or spices as required.
  4. Add beans and cook until heated
  5. Add chocolate, mix well when melted
  6. Serve with rice, cheddar cheese and salad
