This month's recipe is Oysters Kilpatrick

For a sophisticated New Years Eve dinner or as a romantic meal for two, oysters are surprisingly easy to prepare, but undeniably chic.

INGREDIENTS

  • 24 oysters on the shell
  • 1 Tablespoon Worcestershire sauce
  • 1 Cup double cream
  •  Salt and fresh ground pepper
  • 250g Bacon rashers, finely chopped
  • 4-5 Tablespoons fine breadcrumbs

METHOD

Remove oysters from shells and put aside, place the empty shells on a baking sheet and heat in a moderate oven. Stir the Worcestershire sauce into the double cream, return the oysters to the heated shells (use tongs to handle the shells as they become very hot) next add a little of the cream mixture to each shell and season.

Top with the finely chopped bacon, sprinkle over with the breadcrumbs and place under a hot grill for a few minuets until the bacon is crisp.

Oysters Kilpatrick are best served with hot pureed spinach and thin buttered brown or rye bread.
