Now that the weather has cooled down and that stews are in or der you should seriously consider lentils, one of the healthiest sources of plant based protein.

When you enjoy a warm bowl of lentils, you’re enjoying one of civilization’s oldest foods. The history of lentils goes back 10,000 years; the ancient Greeks used lentils in a variety of ways including making bread.

Although lentils are considered to be ‘peasant’ food by some, in reality they are nutritious and flavoursome. They store well and are easy to prepare. Lentils, which, are essentially part of the legume family (beans), are packed with cholesterol-lowering fibre. They are also good for preventing blood sugar levels from shooting up after a meal.

Lentils are packed with soluble and insoluble fibres. The soluble fibre turns into a gel-like paste that traps the bile and flushes it out of the body. The soluble fibre, on the other hand, prevents constipation and digestive disorders like diverticulitis and irritable bowel syndrome. The fibre can also provide the body with slow-burning energy.
